If I’m ever down to basic of the basic and I’m looking for a quick and easy lunch, this black beans and rice recipe is my go to. Honestly, it’s suuuuper easy. Doesn’t require very much work at all! You definitely can see the tomatoes and onions in the closeup but I actually did not chop anything. I added some jar salsa. Ta-da!
I cooked up some rice in a rice cooker (another time saver) because I think it’s way easier than practically almost burning down my kitchen when just cooking white rice on the stove.
Don’t mind the change of place settings. I got a little carried away with my new Fiestaware. I know, #rookiemistake but I’m learning! Plus, this is what it will end up looking like once you stir it all together!
