Ask me any day about going to one of my favorite local restaurants and I will tell you YES because I am OBSESSED with their mexican corn. I’m not sure what it is, but I really can’t resist. I could probably eat about 5 bowls of it.
Well I did a little research and come to find out- it’s super easy to make!! I can’t figure out which is my favorite part of it- the lime? the cilantro?
I think it has to be the cotija cheese. It’s something about that cheese.
It really adds to the dish.
If you’ve never had it, it’s kind of like a Mexican parmesan cheese, if you can imagine what that tastes like.
Just try it!
I just made this and it didn’t last very long.
Literally, 30 minutes tops.
Get ready because you won’t be able to stop eating it either!
Ingredients
- 1 can corn, drained
- 1 jalapeno, diced
- ½ teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Juice from 1 lime
- 2 tablespoons chopped cilantro
- 1/3 cup cotija cheese, grated
- Tortilla chips for serving
Instructions
- Add all ingredients to a large bowl.
- Chill in fridge for at least 30 minutes.
- Serve with tortilla chips.
