Raise you hand if you’re like me and you loooove being invited to potluck parties and you secretly wait til the last minute to plan what you’ll bring?
Ok I’m right here with you.
I’ve got you covered because I’ve made it super easy for you to pick something quick and easy and reallllly delicious.
You’ve gotta make this Goat Cheese and Honey appetizer. I ate mine with some thin crisp crackers and topped them with some fresh blackberries.
And.
Oh.
My.
Goodness.
Talk about a flavor explosion in my mouth.
I’ve been dying to make these and photograph them and my desire got accelerated when I was invited to a friend’s event where they had this amazing finger food. I really could not stop. I mean, nothing really comes between me and cheese.
Seriously guys.
I used these crackers and they were perfect!
What I really like about this recipe is that it’s really not much of a recipe- you really don’t have to prepare much. You won’t want to make this ahead of time because the crackers actually get soggy. I would recommend actually leaving a prepared cracker on the plate if you feel like you want to show off, but you’ll want your friends and guests to prepare it right when they want to eat it because it doesn’t take much effort!
I hope you enjoy this as much as I did!!
Ingredients
- 1 package crisps or thin crackers
- 4-ounce log goat cheese, softened
- Blackberries
- Honey
Instructions
- Place softened goat cheese and fresh blackberries into two small bowls. Place bowls onto a large plate or cutting board and arrange crisps onto the plate/cutting board.
- Right before serving, spread goat cheese onto crisp and top with blackberry and a drizzle of honey.
Notes
I would not recommend preparing the crackers with goat cheese, fruit and honey ahead of time because it will change the texture of the cracker. You can assemble one onto the plate for your guests, but they taste best prepared just before eating.
