It’s that time of the year when we’re all making New Years resolutions. The things that make us all feel better – make better food choices, go to the gym and exercise more, save money. I’d like to say that I did stick to good eating habits for the first half of the month. My best friend come to town and we pretty much ate our way through the weekend. Although I wasn’t eating as healthy I wouldn’t have it any other way! That’s what friends are for, right?!
Now that my friend has had to go back home I’m having to think about getting back to eating well. It can be overwhelming when we have a hard time bouncing back to food that makes us feel good, but I find my greatest success when the recipe doesn’t require many ingredients and takes little lime to prepare. And this is where avocado toast comes into play! There are so many ways to enjoy avocado toast and it’s one of those things that makes you wonder why you’ve never tried that combination. Plus, smoked salmon. I can’t get enough of smoked salmon. I was hooked on these Smoked Salmon Cucumber Boats for quite a while because we know I love all things cheese!
Okay back to this avocado toast! When going through my pantry and kitchen this time around I had just the right ingredients to make this toast. It took less than 5 minutes to make it. 5 minutes! My tummy is happy and there’s no shame in my game for eating multiple slices of bread because it’s avocado and salmon. Woop!

Ingredients
- 1 slice thick bread
- 1/2 avocado
- Juice from 1/2 lemon
- Salt & Pepper, to taste
- 2 thin slices smoked salmon
- Red onion, sliced
Instructions
- Toast the bread until golden brown.
- Place avocado into a medium bowl. Add lemon juice and mash with a fork. Add salt and pepper to taste.
- Spread avocado and lemon mixture onto toast, followed by smoked salmon and red onion.
- Serve immediately.
