I love love love spicy foods. One of the things that becomes a little tricky is when I am cooking dinner for someone else and I’m not sure what kind of heat will be tolerable to them. I think it’s safe to go with foods that have some ingredients to offset the spicy stuff. My friend and I got together and we talked about how the sauce has just the right amount of spice but also had some sweetness from the brown sugar and it was a win! Top off the rice with extra firecracker sauce- YES PLEASE!
All you need to do for this chicken really is to mix together the sauce ingredients until the sugar dissolves and baste the chicken a couple of times while it’s cooking. The best part comes when you broil the chicken and the sauce caramelizes a bit.
I love the taste of the food after I have broiled it but I literally stand there watching the oven like a hawk and making sure the house doesn’t burn down. Until a couple of months ago I didn’t even have batteries in my smoke detector and I can only imagine what would have happened had I gotten side tracked with food broiling in the oven.
So long as you WILL NOT forget about your food broiling, I think you should be good and your home will thank you for it. If you like an extra kick, feel free to add more Frank’s red hot and red pepper flakes. Yummmm!!!
Ingredients
- 4 boneless, skinless chicken breasts
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon extra virgin olive oil
- 2 cups cooked rice
- Firecracker Sauce:
- ½ cup Frank’s red hot sauce
- 1 cup light brown sugar
- 2 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 garlic cloves, minced
- ½ teaspoon red pepper flakes
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, combine chicken, olive oil, salt and pepper. Set aside.
- In a small pot, combine hot sauce and next 5 ingredients. Heat to boiling, then turn to lowest heat setting and simmer.
- Lightly coat chicken and place in oven. After 15 minutes of cooking time, baste chicken with more sauce and cook for a total of 30 minutes, or until chicken is fully cooked.
- If you would like to caramelize the sauce, broil chicken an additional 2-3 minutes of cooking time, while watching the chicken carefully.
- Serve on a bed of rice and top with more sauce if desired.
