If you’re looking for some easy finger foods and appetizers I think you’ll enjoy these firecracker chicken meatballs! They are adapted from this Baked Firecracker Chicken but in meatball form and they’re so yummy! This is probably one of the tastiest appetizers you’ll eat, and the sauce is soo good that you’ll probably even want to double it.
It’s sweet and sticky and it’s FIRECRACKER! They’ll get your tastebuds dancing around!
You’re going to heat up the firecracker sauce on the stove til boiling and then allow it to cool. Mix together all of your chicken meatball ingredients and shape meatballs. Bake them until the chicken is cooked and then get that sauce on there any way you can! Once you’ve got a good amount of sauce on them, bake for a couple more minutes and you’re good to go!
These kept well in the fridge and I had no shame in my game to eat them for three consecutive days. #ILOVEHAVINGLEFTOVERS
Ingredients
- Firecracker Sauce:
- ½ cup Frank’s Red Hot sauce
- 1 cup light brown sugar
- 2 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 garlic cloves, minced
- ½ teaspoon red pepper flakes
- Meatballs:
- 1 pound ground chicken
- 2 garlic cloves, minced
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- ½ teaspoon onion powder
- 2 eggs
- 1 cup Panko breadcrumbs
Instructions
- Preheat oven to 475 degrees. Line a baking sheet with parchment paper and set aside.
- In a small pot, combine hot sauce and next 6 ingredients. Heat to boiling, then turn to lowest heat setting and simmer for about 10 minutes. Remove from heat and allow the sauce to cool. Sauce will thicken as it cools.
- In a large bowl, combine the ground chicken and next 7 ingredients. Use hands to mix the ingredients together until fully incorporated, do not over mix (this will dry out the chicken).
- Lightly wet hands with water and form about 2-3 tablespoons of the chicken mixture into even sized meatballs. Place the meatballs onto the lined baking sheet. 1 pound of chicken should yield about 12 meatballs.
- Bake for 11-13 minutes, or until the chicken is fully cooked. Set aside.
- Place meatballs into the sauce to coat. Place meatballs back onto the baking sheet and bake for an additional 2 minutes. Drizzle or brush more sauce if desired.
