One of the good things about baked recipes is that once you’ve gotten over the prep work, the hardest part is over! Once it’s in the stove you have the opportunity to avoid washing ALL of the dishes and sneak out of the kitchen to watch some tv. Or sometimes you will have to use that time to be productive and clean up the kitchen. We all know the dishes like to just hang around and don’t go back to where they belong all by themselves. Womp womp.
When I was making this I realized I did not have a zester or lemon squeezer but I ended up making it work by using a potato peeler to zest and then and cutting the zest into tiny pieces. It was a pretty hilarious setup! Right after I was done laughing at myself I jumped on amazon and ordered this zester and this lemon juicer.
You can use whatever vegetable you prefer, but you would want to make sure that it’s got the same cooking time as the chicken so both are done cooking around the same time.
