My friend and I decided to make dinner plans together. She is a vegetarian and I love meat. I wasn’t sure what to make because how could I make dinner without meat. No meat? Are you kidding? Is this some kind of sick joke? Well as I looked up vegetarian recipes earlier that day I decided how fun it would be to make black bean burgers! It was something that always looked good but I had never been motivated to make them because I always went with the beef. Don’t get me wrong- I really like burgers made with beef, but when I made this I was very impressed! I added a few things to the beans, and I actually like the salsa/bean combo (see my recipe for shortcut beans and rice here) and was glad it turned out good. I have a feeling I’ll be trying more black bean burgers because there’s so many variations!
I ended up putting a few of the patties in my freezer for future meals when I need something quick to eat and don’t want fast food! Speaking of the freezer, this is something I can actually keep in the freezer at work so that I don’t have to stress when I forget to bring my lunch! Win!
Ingredients
- 1 15-ounce can Bush’s black beans, drained
- 1 egg
- 2/3 cup Italian breadcrumbs
- ¼ cup salsa
- Salt, to taste
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon cumin
- ¼ teaspoon cayenne pepper
- ¼ teaspoon paprika
- Burger Buns
- Desired toppings:
- Lettuce
- Tomato
- Ketchup
- Mustard
- White or red onion
- Pickles
Instructions
- Heat olive oil in a large skillet to medium low heat.
- Place beans in a large bowl and mash well with a fork. Add egg, breadcrumbs and remaining ingredients. Mix together with hands until fully combined. Form into 4 large patties or 5-6 medium sized patties.
- Add to pan and cook each side for about 3-4 minutes.
- Transfer to a burger bun and serve with desired toppings.
