I can hardly contain my excitement for my upcoming trip to San Diego! I leave tomorrow! It’s been over two years since visiting my friends and family out there and I’m totally looking forward to this! I’m already thinking about my first meal once I get there. That should be no surprise, I mean.. I do have a food blog so my life pretty much rotates around food.. talking about it, cooking it, eating it, wishing I was eating it..
Well I do have to talk about this recipe real quick. It’s bacon, lettuce, and tomato. With pasta! You really can’t go wrong here. This BLT pasta salad makes a great side dish and obviously you can have just a little bit (I won’t promise that because it’s so good!) or eat a huge bowl like I did.
It’s got the right amount of creaminess from the mayo and greek yogurt, a good crunch from the bacon and the healthy lettuce and tomato. You’re going to love it!
Ingredients
- 3 cups cooked macaroni noodles
- 3/4 cup mayo
- 1/4 cup plain Greek yogurt
- 3 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 strips cooked bacon, crumbled
- 1 cup diced roma tomato
- 1 cup baby spinach, roughly chopped
Instructions
- In a large bowl, add macaroni noodles and remaining ingredients. Mix until fully combined.
- Place in fridge for at least 2 hours, preferably overnight.
- Serve cold.
