Okay so I’m just going to say one thing right now- making pizza at home is so fun! I know we all have those days where cooking is really the last thing you want to do. It’s so much easier to look online, pick the picture that looks the best, press a few buttons and then wait about an hour for your pizza to arrive. All of that does sound good and all, but where’s the fun in that? Grab a friend or two, have a date and make some pizza out of it!
Just put whatever you want on it. I think only once have I ever ordered a bbq chicken pizza at a restaurant because I love making it at home. It also comes out so much better! With all of the summertime grill food I’m going to assume you will be grilling some chicken- so put that thang on a pizza! All about the shortcuts friends!
Let me just tell you one thing about this pizza. THE. JALAPENOS. WERE. SO. HOT. I’ve had my share of fresh jalapeños. Often I can eat them with no problem. Well these really were soooo spicy. So use caution! I guess maybe now is the season?
You know believe it or not, you can freeze a few pieces for later! It obviously won’t be as good as the fresh pizza but reheat it in the oven once you’re ready and it will definitely save you from worrying about not having dinner and worrying about washing the dishes next time!
Because, pizza.
Ingredients
- 1 can Pillsbury Classic or Thin Crust Pizza dough
- 2 cups shredded mozzarella cheese
- 3-4 tablespoons all-purpose flour, for dusting pan
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon grated parmesan cheese
- 1 teaspoon dried basil
- ½ cup barbecue sauce
- 4 strips cooked bacon, cut into small pieces
- 1 cup cooked shredded chicken
- 1 fresh jalapeno, diced
- ½ cup red onion, diced
- ¼ cup fresh cilantro, chopped
- 2 tablespoons barbecue sauce, for topping
Instructions
- Preheat oven to 425. Lightly dust pizza pan or cookie sheet with about 1-2 tablespoons flour.
- Roll out pizza dough until desired thickness. Add 1 tablespoon olive oil to pizza dough, spread evenly. Add parmesan cheese and basil. Add about ½ cup barbecue sauce spread across pizza crust. Top with shredded mozzarella cheese, chicken, jalapeno, bacon, red onion.
- Cook in oven for 15-20 minutes, or until cheese is melted and crust is desired doneness.
- Top with fresh cilantro and barbecue sauce.
