When I realized I was going to have some rice leftover from another recipe, I also remembered that I had smoked sausage so I decided to make this fried rice. Since I already had the rice, the entire recipe took only 30 minutes!
You will start by slicing up your sausages and cooking them until browned on all sides.
It should take you about 10 minutes or so, depending on your stove settings.
Once you are done with the sausages, remove from the pan and set aside on a lined paper towel. I know this sounds somewhat counterintuitive but you will save some of that grease (goodness) in the pan to use for the vegetables. Feel free to skip this step and throw out the grease and use olive oil instead.
Normally I’ve used frozen diced carrots but I had leftover carrots from my teriyaki tacos recipe so decided to go with those!
If you have eggs on hand, go ahead and add those in the pan. It should only take a couple of minutes to cook and adds nice color to the rice!
Once you’re done cooking up everything you can combine them all in the pan. Next is adding soy sauce and rice and you’re done!
Ingredients
- 2 teaspoons olive oil
- ½ lb smoked sausage, sliced
- 2/3 cup carrots, shredded or diced
- 2/3 cup peas
- 2 eggs, scrambled
- 2 tablespoons soy sauce
- 1 cup rice, cooked
- Salt
- Pepper
- Cayenne pepper
- Paprika
- Garlic powder
- Onion powder
- 1 tablespoon green onion, chopped
Instructions
- Heat olive oil in a large skillet to medium heat.
- Add sausage and cook for about 10 minutes, or until sausages darken and get a little crispy around the edges. Remove the sausage and set aside.
- In the remaining oil, add carrots and peas and sauté for about 5 minutes, or until vegetables become soft. Season to taste. If there is not enough oil, add about a teaspoon of olive oil.
- Add the eggs and scramble in the pan for about 2 minutes, or until fully cooked. Season to taste.
- Add sausages, fried rice, and soy sauce to pan and mix until fully combined.
- If desired, top with green onion.
