Carrots is one of those vegetables that I really really like IF THEY’RE NOT RAW. Sorryforyelling. But seriously, I know a lot of you out there probably like raw carrots but it’s just not my thang. These roasted carrots are seasoned with garlic and balsamic vinegar and takes just 5 minutes to prepare! Who doesn’t have 5 minutes??

Garlic Roasted Carrots
Ingredients
- 1 pound carrots, skin removed, ends trimmed
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Chopped parsley for topping
Instructions
- Preheat oven to 375 degrees. Oil a baking sheet with olive oil to prevent sticking.
- In a large bowl, mix carrots, olive oil, balsamic vinegar and garlic until carrots are fully covered.
- Place carrots in a single layer onto the prepared baking sheet. Season with salt and pepper to taste.
- Bake for 45 minutes, or until tender.
- Serve immediately and top with parsley.
