Garlic Roasted Carrots

Okay carrots, we haven’t forgotten about you. This post is geared towards you. I’m sorry for forgetting about you and not giving you enough love. 

Carrots is one of those vegetables that I really really like IF THEY’RE NOT RAW. Sorryforyelling. But seriously, I know a lot of you out there probably like raw carrots but it’s just not my thang. These roasted carrots are seasoned with garlic and balsamic vinegar and takes just 5 minutes to prepare! Who doesn’t have 5 minutes??

Garlic Roasted Carrots

Ingredients

  • 1 pound carrots, skin removed, ends trimmed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Chopped parsley for topping

Instructions

  1. Preheat oven to 375 degrees. Oil a baking sheet with olive oil to prevent sticking.
  2. In a large bowl, mix carrots, olive oil, balsamic vinegar and garlic until carrots are fully covered.
  3. Place carrots in a single layer onto the prepared baking sheet. Season with salt and pepper to taste.
  4. Bake for 45 minutes, or until tender.
  5. Serve immediately and top with parsley.
