I hope you’ve had an awesome weekend! I felt like I had so much to do this weekend and then ended up getting a good dosage of work and play. Having that balance is so important! I stayed home Friday night and had a photo shoot on Saturday for an adorable 1 year-old. I love taking candid, natural shots that really show true personality of the child, natural and raw facial expressions. For that reason I find taking natural photographs of children and their families really make me happy because the baby won’t always be that small or have those adorable little shoes or adorable little diapers and it’s great to look back and have those memories.
Since I did not have an all-work kinda weekend I was able to spend some time finding some more fun recipes to create for you all! Here’s a recipe for Greek chicken that came out so tasty and it takes about 30 minutes to make. You’ll have to try it! The tomato and olive relish——soo good!!! The chicken and relish taste so fresh and you’ll wonder how you never made it before!
I topped with even more lemon juice and fresh parsley. Yummmm!!
Ingredients
- 3 boneless, skinless chicken breasts
- 1 tablespoon extra virgin olive oil
- Zest and Juice of 1 lemon
- 1 teaspoon honey
- 2 cloves garlic, minced
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Tomato relish:
- 1 cup diced tomatoes (4 roma tomatoes)
- 1/3 cup Kalamata olives, chopped
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- 3 tablespoons fresh parsley, chopped
Instructions
- Combine tomato relish ingredients and set aside.
- In a large bowl, mix 1 tablespoon olive oil, lemon zest, lemon juice, honey, garlic, oregano, salt and pepper until combined. Add marinade and chicken breasts to a large ziploc bag and marinate in fridge for at least 30 minutes, up to 4 hours.
- Heat 1 tablespoon olive oil in a large pan to medium heat. Cook chicken 4-5 minutes on each side, or until fully cooked. When chicken is fully cooked, remove and set aside.
- Serve chicken topped with tomato relish.
- Garnish with fresh lemon juice and parsley if desired.
