Hello again! I apologize for slacking with new posts! I hope this beef taco recipe makes up for it. Please make it for dinner, it’s just SO. EASY. And it’s made with a secret ingredient. But since I like you all, I will tell you what that ingredient is… it’s a few tablespoons of tomato paste! It added a nice tomato flavor to the beef. What do you think about that? Can’t knock it til you try it ;-p
I think tacos just have a way of making everyone happy. TACOS! So versatile and they always hit the spot! And they’re so easy! I’ve spent many many dollars on tacos, but that’s life right? The good thing about these is that you can make them yourself! And no one around you will judge you for eating like 4 or 5 of them. Let’s be honest here, who can really eat just one taco?

Ingredients
- 1 pound ground beef
- 1 tablespoon extra virgin olive oil
- ½ yellow onion, diced
- 3 tablespoons tomato paste
- 1 4-ounce can green chiles
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cumin
- ½ teaspoon red chili flakes
- ½ teaspoon garlic powder
- Tortillas of your choice
- Optional toppings:
- Lettuce
- Diced Tomatoes
- Cheese
- Jalapenos
- Sour Cream
- Cilantro
Instructions
- Heat olive oil in a large pan to medium heat. Add onions and sauté for about 2 minutes, or until onions soften. Add ground beef and crumble, stirring occasionally. Cook for about 3-4 minutes, or until fully cooked. Add green chiles, tomato paste and ¼ cup of water. Season with salt, pepper, cumin, red chili flakes, and garlic powder. Cook for an additional 5 minutes until some of the water has evaporated. Serve immediately on a corn or flour tortilla with desired toppings.
