I’m on such a sweet potato kick right now it’s not even funny.
I’m looking at all the ways to include sweet potatoes. Of course I end up making a recipe that’s pretty similar to my Sweet Potato Hash with Chicken and Apple Sausage except it’s made with kale! And chorizo! And lime! It’s similar, but it’s not the same.
I’ve gotten a new love for kale and it’s so diverse and can be made so many different ways. I also read that you should massage the kale.. which I did not do.. I figured I could skip that step since the kale in this recipe is sauteed, but massaging? That will be something I will have to look into.. it’s a thing.
I’ve eaten this hash topped with fried eggs, I’ve eaten it with avocados and fresh lime juice on top. It’s really your call. But it’s filled with so much flavor and will keep you full for a while. It’s also Whole30 yeeee!
Ingredients
- 8 ounces chorizo sausage, casings removed
- 1 tablespoon olive oil
- 1 teaspoon fresh garlic, minced
- ½ cup red onion, diced
- 2 cups sweet potatoes, diced
- ¼ cup water
- 3 cups kale, chopped
- 1 teaspoon cumin
- Salt and Pepper to taste
- Optional Toppings:
- Fried Egg
- Avocado slices
- Juice from 1 lime
Instructions
- Heat a large pan to medium heat. Add chorizo and cook for about 5 minutes. Remove chorizo from pan and place on a plate lined with 2-3 paper towels to soak up all of the grease.
- Add olive oil and sauté garlic and red onion in pan for about 3-4 minutes, or until onions are softened and garlic is fragrant. Season with salt and pepper to taste.
- Add potatoes add ¼ cup of water to pan. Cover and simmer on medium low heat for about 10 minutes, or until potatoes are softened.
- Add kale to pan and cook for about 3-4 minutes, or until wilted.
- Remove pan from heat and add fresh squeezed lime juice.
- Serve immediately with optional toppings.
