So I was in my car yesterday driving about 30 miles out for work, and that’s the time I use to jam/dance/sing at my heart’s content and sometimes reflect in my own thoughts. Just kinda depends what’s going on at that time. Yesterday I used my time in the car to just listen to more mellow music so I was listening to Adele radio which is great. Sidenote: I can’t speak highly enough about my $10 contribution to Spotify for their premium subscription. You can save albums and playlists and listen offline and you can also listen to radio. Okimbackontrack: Anywho I was mellowing out being all calm listening to Adele and then the song ends and abruptly the next song comes on.. “7/11” by Beyonce. Normally I would have skipped the song because IT HAD NOTHING TO DO WITH THE ADELE SONG but I couldn’t resist and I quickly transitioned to the dance beat and got into it. You would think that there would have been some type of transition to the next song, but no. I don’t know how they come up with the algorithms or whatever it is, but it’s cool. I can still jam out. And it made the car ride that much more interesting! *waves my hand side to side* “put it in the air”. Okay I’m done ;-p
Check out this recipe I have for you today. It was such a piece of cake. A bomb, really. A MEATBALL BOMB! It was SO easy. The pre-cooked meatballs are perfect and has 8 meatballs, perfect pairs to the 8 biscuits. Why wouldn’t I put these together? I couldn’t resist adding cheese on top. Because, cheese. Please try this, it’s kinda like a baby calzone!
Ingredients
- 1 can Pillsbury Homestyle Butter Tastin' canned biscuits
- 8 cooked Italian-style meatballs
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 tablespoons butter, melted
- 2 garlic cloves, minced
- 1/2 teaspoon Italian seasoning
- PInch of salt
Instructions
- Preheat oven to 350 degrees. LIne baking sheet with parchment paper or silicone baking mat.
- Using hands or rolling pin, flatten each biscuit into 4 inch round.
- Place 1 meatball and 2 tablespoons marinara in center of dough round. Top with 2 tablespoons mozzarella cheese.
- Wrap dough around meatball and cheese, pressing edges to seal. Place seam side down, leaving room for spreading. Continue this process until all biscuits and meatballs are wrapped.
- In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt. Spoon on top of each biscuit. Top with extra marinara and cheese, if desired.
- Bake for 18-20 minutes, or until golden brown. Serve hot.
