Hiya! I have taken some time off over here in blog land. I’ve been busy working on other projects but I am missing food photography and food blogging! When I first began this food blog journey a couple of years ago I pretty much knew nothing other than what I liked to eat and then actually eating it. Over time (and I’m still learning) I have developed my style and I enjoy sharing recipes and silly blurbs about myself, or my day, for you magical readers.
Not much has changed over the last couple of months- I love cooking but still hate doing the dishes. Any takers? Any-who thanks to you readers I am motivated to keep things alive and well over here at Tabitha Talks Food.

We knew it wouldn’t be too long before I had to post Mexican food here on the blog. I think I could probably eat Mexican food every day. I think I had it three times last week, and I will probably have it again tonight. There’s so much variety!
Tacos definitely are at the top of that list.
But.
Instead of making something similar to these BBQ Chicken Tacos or these Salmon BLT Tacos, I decided I would make something a little more on the traditional route. Just a little. If you haven’t already tried Mexican Pizza, today is your lucky day!
This Mexican Pizza is made with two flour tortillas, stuffed with a beef and bean mixture and then topped with enchilada sauce, cheese, and tomatoes. It might remind you of a fast food taco restaurant that you may be familiar with, but I assure you that you can make Mexican Pizza right at home!

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound ground beef
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 can refried pinto or black beans
- Flour tortillas
- 1 can enchilada sauce
- Diced tomatoes
- Shredded Mexican cheese
- Green onion, diced
Instructions
- Preheat oven to 350 degrees.
- In a medium skillet teat 1 tablespoon extra virgin olive oil to medium heat.
- Add beef, salt, pepper, cumin, paprika, chili powder, and cayenne pepper. Cook for about 10 minutes, or until beef cooks through.
- Meanwhile, heat refried beans either in microwave or on stovetop until warm.
- Heat tortillas for about 1 minute on each side, or until warm.
- Assemble each pizza by layering tortilla, 1-2 tablespoons of beans and beef, and a second tortilla. Top with 2 tablespoons enchilada sauce, 2 tablespoons tomatoes, 1/4 cup cheese cheese, and green onion.
- Bake for 7-8 minutes, or until cheese is melted.
