Here we go again with more energy balls! I know you must think I’m crazy for having all these energy balls on the blog. First it was the No-Bake Energy Balls and then came the Monster Cookie Energy Balls (which were actually more like a cookie). I knew it couldn’t stop there. There are so many variations and combinations of yummy but also nutritious ingredients into ball form so I knew I had to add these to the blog.
These ones are made with peanut butter, oats, honey, banana, coconut, flax and chia seeds so there’s a ton of flavor! To me it almost tastes like banana bread! I think it’s a win-win because they’re great for a breakfast to get your day started, but you’ll probably also find yourself reaching for them as a snack because of those chocolate chips that we can’t resist!
I love recipes like this because there’s minimal prep time and it yields a lot. I love to keep them stored in my fridge during the week because it makes grabbing and going so easy! Please tell me I’m not the only one rushing out the door with food in one hand and my keys in the other!
Ingredients
- 2 cups old fashioned oats
- 2 ripe bananas, mashed
- 2/3 cup unsweetened coconut flakes
- 1/2 cup peanut butter
- 2 tablespoons flax seed
- 1 tablespoon chia seed
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1/2 cup mini chocolate chips
Instructions
- Add all ingredients into a large bowl and mix until fully combined.
- Refrigerate for about 1 hour (this will help form balls).
- Roll into about 30 balls.
- Refrigerate up to 1 week or freeze.
