Something TERRIBLE happened. I was doing my regular house duties and cleaning the dishes, putting them away, and then all of a sudden I heard a loud shatter. I knocked my french press off of the counter onto the floor! Ahh!!
My lovely maker of all things cold brewed is now broken into a thousand pieces! I began instantly thinking to myself “see, if I hadn’t have been doing dishes right now, this wouldn’t have happened” and I totally blamed the reason for that haha! I know that’s not being realistic and I know accidents happen but. cold. brewed. coffee. I need it!
I will probably have another French press maker on the way- I enjoy it so so much and I’m pretty sure they are brewed much stronger than the hot stuff! Stay tuned on the blog, I will probably be posting a recipe for my go-to iced coffee soon!
As you know I’m a fan of caffeine because it’s where I get my energy in the mornings! Times like today I am glad to have a backup plan- energy balls! Not only do they give an energy boost in the mornings when tragedies happen, these energy balls serve as good as a snack in the afternoons! These peanut butter and chocolate energy balls don’t call for any bake time- that’s right- you can enjoy them right away (although I will say they taste better cold)! They’re full of good stuff- chia seeds, flax seeds, almonds, and of course some peanut butter, chocolate chips, cocoa powder, vanilla.
Good thing we know how to balance :-p
Ingredients
- 1 cup old fashioned oats, divided
- 1/3 cup chia seeds
- 1/3 cup flax seeds
- 1/3 cup whole almonds
- 2 tablespoons unsweetened cocoa powder
- 1 cup mini chocolate chips, divided
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
Instructions
- In a blender/food processor, combine 1/2 cup oats, chia, flax seeds, almonds, cocoa powder, and 1/2 cup chocolate chips. Blend until mixed into a course flour texture.
- In a large bowl or stand mixer- combine flour mixture with peanut butter, honey and vanilla. Mix well. Add in remaining 1/2 cup oats and 1/2 cup chocolate chips. Stir gently until combined.
- Use a heaping teaspoon to scoop and form into ball. Place onto a baking sheet or large plate. Continue this process to make remaining balls.
- Store energy balls in airtight container in fridge for up to a couple weeks.
