Happy Friday! A little while ago I posted a recipe for Pan Seared Salmon with Avocado Salsa and couldn’t believe how tasty it was! I thought about another way I could use the salmon and decided to make… you guessed it… TACOS! These tacos are topped with a spicy cilantro mayo and cotija cheese. I’m pretty sure I ate 4 of these tacos in one sitting. I really don’t mess around. I can’t get enough of tacos. Ahhhhh!!
I LOVE chipotle mayo. I’ve made crispy tilapia tacos and topped them with this mayo but I was in the mood for salmon. I will post a recipe for the crispy tilapia tacos at a later date if you are interested! 😀
These tacos taste so fresh. They’ve got just a bit of spicyness from the mayo and then some deliciousness from the lime juice and cotija cheese. Everything tastes better with cheese!
It’s Friday so why not go crazy and dive right into these tacos!
Ingredients
- 3 pieces of salmon (roughly 2 pounds), skin removed
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon paprika powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- Flour or Corn Tortillas
- Cotija cheese, for topping
- For the avocado salsa:
- 1 avocado, diced
- 1/2 small red onion, diced
- Juice from 2 limes
- 2 tablespoons finely chopped cilantro
- Salt and Pepper to taste
- For the cilantro mayo:
- 1/2 mayo
- 1/2 sour cream
- 2 chipotles peppers in adobo sauce
- 1 teaspoon adobo sauce
- Juice from 1 lime
- Salt and Pepper to taste
Instructions
- In a medium bowl, combine the avocado salsa ingredients. In a small bowl, combine the chipotle mayo ingredients. Store both bowls in the fridge until ready use.
- Mix the salt, pepper, cumin, paprika, onion powder and chili powder in a small bowl. Add olive oil and salmon to the bowl and rub seasonings onto salmon until fully seasoned.
- Heat olive oil in a large skillet to medium high heat. Add salmon and cook for about 3 minutes on each side, or until desired doneness (I like mine medium-medium well).
- Remove salmon from pan and set aside.
- Assemble tacos by heating up tortillas, placing salmon onto tortilla and topping with avocado salsa, cotija cheese, and chipotle mayo.
