Most of the slow cooker recipes on my blog are made with some sort of meat, and it’s usually chicken. I guess I didn’t really think about the fact that appetizers can also go in that thang. What are your thoughts on that? Who has even heard of spinach and artichoke slow cooker dip! It’s a thing and it’s a total game changer!!

Well I’m going to assume since this blog post caught your attention that you’re a total fan of amazing cheesy and addicting dips. There’s a little bit of prep work for this dip, and by prep work I mean really just chopping up your artichokes and mincing the garlic. Besides that it’s just measuring the creamy and cheesy ingredients. And I mean cheesy!
Everything was so quick, and I’m so glad that frozen spinach is a thing. I thawed it out and strained the water and it was good to go in the slow cooker. Okay so that’s everything.
Please, for goodness sake- do not forget to add the spinach to the slow cooker. Believe it or not, I added everything (forgetting the spinach) to the slow cooker, stirred, turned it on, left my house and was at the coffee shop reading. I realized AN HOUR LATER that I had forgotten to add the spinach. Who does that? Literally– the recipe is called Spinach and Artichoke Dip! So I basically made artichoke dip. Maybe that’s a thing. If so, I’m totally not trying to kill your vibe. Sigh. I was just so careless. I drove back home just to add spinach into the slow cooker. I did have quite a bit of distraction with iced coffee when I was able to be patient and let all the flavors combine so I guess that was a good thing!
You better believe the second I walked back in the door from the coffee shop my apartment smelled sooo good! It was so delicious!!
Ingredients
- 2 (14-ounce) jars artichoke hearts, drained and chopped
- 10-ounce package frozen chopped spinach, thawed and squeezed dry
- 8 ounces of plain Greek yogurt
- 2 cloves garlic, minced
- 3/4 cup grated Parmesan cheese
- 3/4 cup milk
- 1/2 cup feta cheese, crumbled
- 1/3 cup mayo
- 1 tablespoon red wine vinegar
- 1/2 teaspoon black pepper
- 8 ounces cream cheese
Instructions
- Spray slow cooker with nonstick spray.
- To the slow cooker, add artichoke, spinach, Greek yogurt, garlic, Parmesan, milk, feta cheese, mayo, red wine vinegar, and black pepper. Stir ingredients. Top with cream cheese.
- Cook on low for 3-4 hours. Stir cream cheese into the mixture and cook for an additional 15 minutes.
- Serve hot with chips or crackers.
