So I know most of the recipes on my blog have the good stuff- the cheese, the bread, carbs, all of that! I decided to make this Guacamole Burger made with Southwest ingredients and I didn’t miss those above mentioned ingredients. I was also doing Whole 30 at the time so I wasn’t able to eat the ketchup or mustard but I was happy with the way this turned out. This guacamole burger is wrapped in lettuce and made with a couple of your standard burger toppings- the onion and tomato. You knew I had to add in a Mexican flavor with the guacamole!
My blog has been a little neglected lately. I moved about a month ago and as much as I don’t like to admit that moving is no big deal, it really is a big deal! I waited a little too long to pack (oops) and then took my time getting my stuff out of my old apartment. My goal was to get EVERYTHING done in one day and oh boy was that an ambitious goal.
It took a few different weekends to get everything out of my apartment and packed into storage and then waiting for the right time to move the rest of my stuff into the new place. Not only was the move a little hard for myself, but it was also hard for one of the kitties! Milo is about 3 years old and had such a hard time with the move, I considered taking him to the vet to get kitty anxiety meds because he wouldn’t eat!
Fast forward to now, he’s out and about. Still a bit skittish as always, but he’s finally used to his new home. When the cat wants to hide in the bathroom drawer, you just gotta let him until he’s used to the new place!
What have been some ways you’ve been successful during a move with anxious pets? I’d love to read your responses below!
Ingredients
- 1.5 pounds ground sirloin or beef (I used 85/15)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon chili powder
- 1/8 teaspoon cumin
- 1/8 teaspoon garlic powder
- 1 tablespoon extra virgin olive oil
- Optional Toppings:
- Bun
- Red onion rings
- Lettuce
- Tomato slices
- Ketchup
- Mustard
- Mayo
Instructions
- Add ground beef to a large bowl and season with salt, pepper, paprika, chili powder, cumin, and garlic powder. Mix thoroughly with hands until seasoning and beef are fully combined.
- Divide seasoned beef into four portions and then form each portion into a patty.
- Heat olive oil in a large skillet to medium high heat.
- Add hamburger patties in a single layer (mine could only fit two at a time) and sear on each side for about 2 minutes. Turn heat down to medium low heat and continue cooking on each side for about 2-3 minutes, or until it reaches your desired doneness.
- Serve with optional toppings.
